    * Olive Oil, 2 1tsp
    * Zucchini, 4 cup, sliced
    * Onions, raw, 1 cup, chopped
    * Garlic, 2 cloves
    * *Balsamic Vinegar, .5 tbsp
    * Parsley, .25 cup
    * Thyme, fresh, 1 tsp
    * Rosemary, .5 tsp
    * Pepper, black, .25 tsp
    * Egg, fresh, 1 cup (4.86 large eggs)
    * *Flour, white, .33 cup
    * Parmesan Cheese, grated, .25 cup


Preheat oven to 350. Spray a 9" square baking pan with nonstick spray.
In large nonstick skillet heat oil add veggies and cook over medium heat for12 minutes. Add vinegar cook and additional 2 minutes.Remove from heat and let cool slightly - add spices.
In large bowl whisk eggs flour and cheese. Stir in zucchini mixture. Transfer to prepared ban and bake 30-35 minutes.
