    2 pkgs Soy Soya (4 cups dry)
    6 cups boiling water
    broth (optional)
    1 large onion, sliced
    1 can diced tomatoes


Makes 8 servings

Soak soy soya in hot water (or broth) for 10-15 minutes.
Do not drain
Slice onion and place at bottom of oblong casserole dish
pour soy soya and liquid into dish
top with canned tomatoes
Cover tightly with aluminium foil
Bake at 350 for about 45 minutes to an hour. Do not let dry out.
