    1/2 large onion, chopped
    1 medium red or green pepper, chopped
    1 T water
    1 15 oz. can black beans
    1 medium tomato, chopped
    1 cup salsa, divided
    10 corn tortillas


In a nonstick skillet, cook onion and pepper in the water 2-3 minutes or until tender. Add black beans, mash up about half of them. Stir in tomatoes and half of the salsa. Heat through. Spoon about 1/4 cup of the mixture down the center of each tortilla, roll up, and place in a baking pan coated with nonstick spray. Top with remaining salsa. Cover and cook @ 350 for 20 minutes. Makes 10 enchiladas.
