Introduction

Though the title isn't overly appetizing, the dish is delicious. Even picky kids like this one. Though the title isn't overly appetizing, the dish is delicious. Even picky kids like this one.
Number of Servings: 8

Ingredients

    2 lbs Chicken Breast, boneless, skinless
    1 TBSP garlic powder
    4 Cups Low Sodium Chicken Broth
    2 tsp dried Rosemary
    ½ tsp dried Basil
    ½ tsp dried Oregano
    3 cups Tomatoes, chopped (canned is ok)
    2 cups instant brown rice

Directions

Heat large skillet, Add chicken and ¼ cup chicken broth, cover and let heat for 5 min - turning half-way through the cooking time.
Remove chicken from pan, let cool slightly (about 2 - 3 min), then cube. Return chicken to pan, stir-fry for about another 5 min (until chicken is cooked through).
Stir in rice, seasonings, and remaining broth. Heat to boiling; reduce heat. Cover and simmer until most of the liquid is absorbed and rice is cooked through.
Makes 8 servings
