Ingredients

    2 small red potatoes, chopped
    1/2 yellow squash, chopped
    1/2 zuccinni, chopped
    1/2 cup onion, chopped
    1 small hand full sugar snap peas, whole
    10 baby carrots, whole
    1 tbsp extra light virgin olive oil
    1/2 tbsp kosher salt
    1/2 tbsp black pepper


Directions

There are two ways of doing this:

1. Chop all your veggies and put in gal ziplock bag. Pour in olive oil, salt, and pepper and shake to coat. Line a cookie sheet with foil, spread veggies evenly, and bake at 400 for 20 minutes.

OR

2. Chop all your veggies and put in a ziplock steam bag. Add olive oil, salt, and pepper and microwave according to bag. I usually microwave 7 to 10 minutes.
