Ingredients

Chicken Breast (roughly 1lb cubed)
Salt and Pepper to taste
2 tbl Olive Oil
1 large Sweet Onion (Chopped)
1 large Red Bell Pepper (Chopped)
3 garlic clove (minced or crushed)
2 tsp Paprika
1 c White Wine
1.5 C Chicken broth or stock
1 can (14.5 oz) Diced Tomatoes (I used fire roasted w/ garlic)
3 Bay Leaf
1c Frozen Peas
1 can black beans (rinsed)
Directions
Makes 4 Hearty or 6 regular services.
Pour the oil in a large pan and heat on med-high. Add the chicken and season with salt and pepper, brown 4-6 minutes. Add the diced onions and peppers and cook til softenedabout 4 minutes. Add the garlic and paprika. and cook 1 more minute. Add the small bag of mahatma rice and the extrra 1/2 c of white rice and mix with the veggies and chicken. Add the diced tomatoes, black beans, bay leaves, white wine and chicken broth. Bring everything to a boil, cover and then lower temp to med-low for 20 minutes. Uncover and stir in the frozen peas. Cover for another 10 minutes, remove the bay leaves and eat.
