    1 lb. dry black beans
    2 1/2 qt. water
    2 c. beef broth (veg broth should work as well)
    2 tsp Mrs. Dash Italian seasoning
    2 medium new potatoes, diced
    2 medium yellow squash, sliced and quartered
    1 small red onion
    1 small green bell pepper
    1 jalapeno, seeded and chopped
    1 pressed garlic clove
    1 tbsp ground oregano
    2 tsp ground coriander


*In order to keep sodium content under control, dried beans are used in this recipe.

Use the overnight or quick soak method for prepping the black beans.

Cook black beans in a large pot and cover with water. Add Mrs. Dash seasoning. Bring to a boil for 1 min. Reduce to simmer and cover while continuing to cook for 1 1/2 hr. Add the rest of the ingredients and cook for 1/2 hr more.
May be enjoyed as is or puree until smooth, if desired. Delicious topped with 1/8 of a diced avocado, 1 tbsp of salsa, fresh cilantro leaves, or all of the above!
Makes 6 1-cup servings.
