Sort of like chicken cordon bleu, but healthier, and with a little zip. Sort of like chicken cordon bleu, but healthier, and with a little zip.
Number of Servings: 4


    * Kraft Fat Free cheddar, 0.5 cup
    * Chicken Breast, no skin, 2 breast, bone and skin removed
    * Publix 98% Fat Free Deli Meat, Extra Thin Sliced Smoked Turkey Breast, 4-6 slices
    * Lawry's, Italian Garlic Marinade, 4 Tbsp
    * Garlic powder, 2 tsp
    * Oregano, ground, 2 tsp


Fillet chicken breasts the entire length of the breast, making 2 roughly equal thin pieces. Spoon shredded cheddar on breast, avoiding the edges. Lay slices of deli meat so that that its 1 slice thick, and doesn't hang over the edge of breast or only meets the edge.
Roll the breast up over itself and skewer it to hold it in place. After all 4 pieces are skewered, place in frying pan and lightly cook roll-up on both sides, until just the surface of both sides is white in order to seal the outside.
Pre-heat over to 350.
Place roll-ups in small casserole or baking pan. spoon or brush marinade onto roll-ups. Dust with garlic powder and oregano. Place pan in oven, check at 35 minutes.
Let cool and remove chicken from pan.

SIDE NOTES: Feel free to experiment with different cheeses deli-meats and marinades. Mrs. Dash has no salt varieties of marinades that should drop the sodium. Also I like a nice balsamic, myself. Also you could try throwing a little spinach leaf in there for fun.
