Introduction

Light and easy to prepare. The technique results in a good swordfish. The daper vinaigrette works wvery well with the fish, also with salmon or a more delicate fish such as halibut and sole. Ingredients

    For Vinaigrette
    1 tsp grainy mustard, such as Pommery
    1 tsp Dijon mustard
    1 Tbs capers drained
    ! Tbs caper brine
    1 Tbs freshly squized lemon juice
    1/2 small clove of garlic chopped
    salt and pepper to taste

    For the Fish
    Four 6 oz sword fish steaks, about 34 inch
    salt and pepper to taste
    1 Tbs olive

    For Garnish
    1 bunch watercress, 2 inches of stems, trimmed
    1 ripe avocado, halved, pitted and diced
    2 tsp capers, drained


Directions

Season the fish with salt and pepper. Place the oil for the fish in an ovenproof skillet or dish large enough to hold the steaks in one layer and heat over medium heat until the oil is pan and cook until browned 3 to 4 minutes. Using a spatula, carefully turn the steaks over, transfer the skillet or dish to the center of the oven, bake until the fish is cooked through, 5 to 6 minutes, or just until the fish is opawue throughout.

To serve, have ready 4 warm plates. Arrange the watercress on the plates and place the swordfish steak in the center. Scatter the avocado around the fish. Drizzle the vinaigrette over all and garnish with the remianing capers.
