Introduction

I originally got this from eatingwell.com, but have had it on a recipe card for a few years and thought I'd share it here! I originally got this from eatingwell.com, but have had it on a recipe card for a few years and thought I'd share it here!
Number of Servings: 8

Ingredients

    1 Tbsp olive oil
    4 Leeks, chopped
    2 tsp dried sage
    1/4 tsp black pepper
    3 Chicken Bouillon Cubes (I used vegan)
    6 cups water (usually I just eye-ball it!)
    2 cans cannellini beans, drained & rinsed
    1 chicken breast, chopped

Directions

Saute leeks in olive oil until soft, stirring often (3 min). Stir in sage, cook 30 sec. Stir in broth/water, beans, and chicken. Simmer until heated through.
