    2 cups flour
    1/3 cup Splenda
    1 tsp cinnamon
    1 1/2 tsp baking soda
    1/2 tsp baking powder
    1/2 tsp salt
    1/2 cup walnuts, crushed
    2 large eggs
    14 oz can crushed pineapple, drained
    1 cup grated carrots
    1/2 cup Applesauce
    1 tsp vanilla
    1/2 cup sweetened coconut


In large bowl, combine flour, Splenda, cinnamon, baking soda,baking powder, salt and walnuts.

In medium bowl, mix together eggs, crushed pineapple, grated carrots, applesauce and vanilla.
Add to dry ingredients. Stir til just moistened.

Fill greased muffin tins 2/3 full. Sprinkle with coconut. Bake at 375 degrees F for 18-20 mins. Let stand in pan about five minutes, then remove to rack to cool.
