Introduction

Some might call it tabboleh, but I didn't have a lot of the ingredients that called for so I whipped something up. :) A refreshing salad. Some might call it tabboleh, but I didn't have a lot of the ingredients that called for so I whipped something up. :) A refreshing salad.
Number of Servings: 4

Ingredients

    1 cup dry bulgur or 3 cup hydryated
    2 Tb olive oil
    20 cherry tomatoes, halved
    4 cups fresh beet greens or other greens
    3 cloves minced garlic
    1 Tb red wine vinegar
    1 cup cooked or canned lima beans (drained)
    herbs to taste (I added 1 tsp lemon pepper and 1/2 Tb Zatar)

Directions

If not already hydrated, soak bulgur in hot water until liquid absorbed, about 20 minutes. Press out excess water.

Steam beet greens on low until wilted with garlic.
Combine all ingredients and stir together till well mixed. Serve alone or over lettuce as a salad.
