My husband and I love this for a weekend brunch, but it is easy and quick enough for a weekday. My husband and I love this for a weekend brunch, but it is easy and quick enough for a weekday.

    5 slices low calorie wheat bread (such as Natures Own Double Fiber Wheat)
    3/4 cup egg beaters
    1/4 original sugar free almond milk (the 60 calorie per serving variety)
    a smidge of almond extract
    1 & 1/2 tblspoon of splenda (more or less to taste)
    a dash of cinnamon, nutmeg, and black pepper
    1/4 tsp salt (more or less to taste)

    Serve with warm berry syrup, see below:
    1/2 cup frozen mixed berries - unsweetened
    1 tablespoon, no sugar added preserves in a berry flavor of your choice (I use blackberry)
    2 tablespoons sugar free syrup.


Mix egg beaters through salt (I mix it all in a two cup measuring cup). Pour 1/5th of the mixture (just under 1/4 cup) into a shallow, bread sized dish (shallow tupperware works well). Place one slice of bread in dish, turning to coat both sides. Allow it to absorb the egg mixture, but not so long it gets too soggy and breaks. Meanwhile, heat a non-stick skillet over medium high heat. Spray skillet with butter flavored non-stick spray. Add the egg coated toast, cook until brown on both sides, turning once. Repeat with remaining four slices.

In the meantime mix together ingredients for the warm fruit topping. Microwave for 1 minute, sir, lightly mashed berries, return to microwave for 40 seconds, or until warm.

To serve, cut bread on the diagonal, place each half on a plate and top with the fruit spread. So pretty and delicious!
