Ingredients

3 teaspoons olive oil
1 large onion, chopped
5 garlic cloves, crushed
5 cups vegetable broth
2 potatoes, diced
4 (14.5-ounce) cans diced tomatoes with green chili, undrained
1 cup yellow corn
4 cups garbanzo beans, cooked and drained
4 cups white navy beans, cooked and drained
1/2 teaspoon cayenne pepper ( optional)
1 1/2 teaspoon dried oregano
1/4 teaspoon pepper
2 bunches cilantro, chopped
2 cups vegan enchilada sauce
Directions
Directions:
Heat oil in a large saucepan over medium heat. Add onion and garlic, and sauté 4 minutes or until tender. Add vegetable broth and potatoes. Simmer until potatoes for 10 mins. Add tomatoes and next 6 ingredients (tomatoes through pepper), and bring to a boil. Reduce heat, add chopped cilantro and enchilada sauce and simmer 5 minutes. Ladle into bowls, and sprinkle with vegan cheese if you want.
Yield: 8 servings (serving size: 2 cups soup)
