    4 oz. unsweeted baking squares
    1 stick unsalted butter
    1 cup sugar
    3 eggs
    1/2 cup unsweetened cocoa powder


Preheat oven to 375 degrees. Line bottom of 8 in. cake pan with waxed paper. Butter the top of the waxed paper and the sides of the cake pan.

Chop chocolate into pieces. In top of double broiler melt chocoalte and butter, stirring until smooth. Remove from heat and whisk in the 3/4 cup sugar. Add eggs and whisk well.

Add cocoa powder to mixture and mix until just combined. Pour into prepared pan and bake for 25 minutes, or until top has formed a thin crust.

Cool cake in the pan on a wire rack for 5 minutes; then invert onto a serving plate. May be served with whipped cream, or ice cream, if desired.
