Ingredients

    2 1/2 cups reduced sodium broth or water
    2/3 cup uncooked pearl barley (not quick cooking)
    6 oz mushrooms sliced
    1/2 t dried marjoram
    1/2 t black pepper
    1/2 pound 95% lean ground beef
    1/2 cup chopped celery
    1/2 cup minced green onion
    1/4 cup fat free half and half
    minced fresh parsley (optional)

Directions

Place broth, barley, mushrooms, and pepper in a slow cooker. Cover and cook on LOW for 6 - 7 hours.

Brown beef in large skillet over medium high heat 6 - 8 min; stirring to break up meat. Drain and discard fat. Add celery and green onions. Cook and stir 3 minutes.

Stir beef mixture and half and half into slow cooker mixture. Cover and cook on HIGH until beef is hot and vegetables are tender.

Garnish with parsley.

Serves 4 1 1/4 cups per serving
