Ingredients

    8 tbsp smart balance with olive oil
    1/2 cup maple syrup
    3/4 tsp baking soda
    1/2 tsp salt
    1/4 tsp nutmeg
    3/4 tsp cinnamon
    1 1/2 tsp vanilla extract
    2 organic eggs
    1/4 cup honey
    2 cups whole wheat flour
    1 cup semi-sweet chocolate chips
    1 1/2 cup frozen organic blueberries
    2 bananas

Directions

Preheat oven to 350, scoop out the smart balance into a mixing bowl, melt it slightly, then mix it with the maple syrup until creamy. Add in the baking soda, nutmeg, cinnamon, salt, blend well. Mix in the vanilla, honey, mashed banana and the eggs, one at a time. Blend in flour. Pour in the chocolate chips and blueberries then put the batter into a muffin pan with 12 spaces (well thats what I used anyways) for the muffins. put them in the oven for about 25 minutes. You should have 12 muffins when you're done.
Everyone I've given these to has loved them and always asked me to make more for them. I've been asked to make these for parties alot and know from experience that they are as good a cure to pms as ibprofen :)
