Introduction

Number of Servings: 8

Ingredients

    2-3 tablespoons of canola oil




    1 large onion chopped




    1 lb of lean pork, cut into cubes




    2 cans Stewed Mexican Tomatos (use the salt free if possible, This nutrition info is for regular and the sodium is quite high)




    1 large can of chopped green chilies.




    1 large clove of garlic-minced




    1 tablespoon oregano




    4-5 tablespoons chili powder



    1 teaspoon basil



    1 teaspoon pepper(red may be used)



    Jalapenes to taste

Directions

1. Heat oil in large pot. Add Pork and onions. Cook for 10 minutes.

2. Drain meat and onion mixture and return to pot.

3. Add garlic, 2 cans of stewed Mexican tomatos, chili powder, oregano, basil, jalapenos, pepper and green chilies. Mix well.

4. Add 3 tomato cans of water. Bring to boil, turn to simmer and cook for 50-60 minutes or until pork is tender adding water as needed and adjusting spices to taste.

Makes 8 1 cup servings

    Very Good
    This is a perfect way to use left over pork and it is really good. It stretches out a Pork Roast or Tenderloin into another day. - 7/16/09
