    ½ tbsp Coconut oil
    1 (15 oz) can Black beans, rinsed
    2 Bay leaves
    1/3 cup Onion, finely chopped
    1 cup Long grain brown rice
    2 ½ cups Vegetable broth


Black Beans and Brown Rice
Serves 4 to 6

Wash rice until water runs clear.
In a sauce pot melt coconut oil over medium heat, add onions, black beans, and bay leaves, sauté till onions are translucent.
Add rice and pour vegetable broth in to the pot.
Bring to a boil over medium heat, reduce heat to low, cover and simmer for 25 minutes.
Remove from heat and let rest for 10 minutes.
Fluff with fork before serving and remove bay leaves.
