Introduction

Ingredients

    14 ounce(s) tofu, extra-firm
    cooking spray
    1 Tbsp soy sauce
    1 Tbsp lemon juice
    1 avocado
    6 slice(s) tomato(es)
    3 English muffins, whole wheat

Directions

Slice 14oz block of tofu into three slabs, like sandwich patties. Spray pan lightly with cooking spray, and add tofu slices. Pour soy sauce and lemon juice over tofu, and grill until thoroughly heated.

Slice English muffin. Place slice of tofu, 1/3rd of avocado, and 2 slices of tomato on bottom half of each muffin, and top with other half. Makes 3 sandwiches.
