Number of Servings: 4


    2 full chicken breasts-split into 4 pieces
    1 tsp salt
    1 tsp pepper
    2 cloves garlic
    1 can of italian style diced tomatoes
    1 cup Parmesan cheese
    Barilla WW Pasta (2 oz per person)
    3 pieces of Sun dried tomatoes, roughly chopped
    5 Basil leaves, chopped
    1/2 cup diced Tomatoes
    4 cups chopped Lettuce
    1 tbsp EVOO


makes 4 servings

1. Cut chicken into bite size pieces and brown in EVOO with garlic, sun dried tomatoes, salt, pepper and basil.
2. Place browned chicken and goodies into baking dish with the can of Italian style diced tomatoes.
3. Sprinkle parmesan cheese over the top and bake in 350 degree oven about 30 min
4. While the chicken is cooking start your pasta.
5. When the pasta is done drain and rinse. Top with the chicken and tomatoes hot from the oven.
6. Chop lettuce and dice fresh tomatoes and serve on the side
