A delicious light frittata.
Serve with a dollap of sour cream and hot sauce.

    5 eggs
    2 cups chopped potatoes
    1/4 cup half and half
    1/2 cup shredded cheddar cheese
    2 slices of deli ham, chopped
    1/2 cup chopped onion
    2 tbl Marco Polo Red Pepper Spread
    1 tbl. olive oil


Small Skillet.
Saute the onions, potatoes and ham in the olive oil. Cook for about 10 minutes.

Beat the eggs, half and half, cheese and pepper spread in a bowl.
Pour over sauteed vegetables in pan. Remove from stove and put under the broiler for about 10 minutes. Watch so that it does not burn and that the center is firm.
