My first attempt at a tomato sauce substitute. My first attempt at a tomato sauce substitute.
Number of Servings: 6


    4 large peaches fresh (24oz.) peeled
    1 jar of Sweet Red Peppers (save juice)
    1 onion (1 cup)
    2 cloves garlic (I might add more)
    1 tea. basil
    1/4 teas. oregano
    4 oz. cranberry sauce (jellied)


Put the prepped onion and garlic in a large sauce pan and sweat in the olive oil. Add the peaches, red pepper drained, and seasonings. Stew until broken down. (the times are not accurate yours may vary). At this time I used a potato masher (the gremlins borrowed my immersion blender) to make a nice smooth sauce with texture. I added the juice from the red pepper but the values aren't included on the jar or in my recipe. Add the cranberry sauce for tang and color. Cook until the cranberry sauce is melted and the sauce is to your preferred thickness. Mine measured 4 cups when finished. correct seasonings.
