Ingredients

For the salad:
1 cup cut/shredded romaine lettuce
0.5 cup sliced cucumber (with peel)
Half a small pear, cut to bite-size pieces
10 raspberries, preferrably fresh
6 seedless grapes, cut in halves
For the dressing:
Two heaping spoonfulls of any light or skim fruit yogurt (I often use strawberry)
1 tablespoon light mayo
1 tablespoon olive oil
Lemon juice to taste, the acidity is needed
Directions
Take the shredded lettuce and put in a bowl. Next, on a cutting board, cut the cucumber into slices, cut the pear into bite-size pieces, and halve the grapes. Add these to the lettuce in the bowl.
Next, to make the dressing, you take another (smaller) bowl and first put in the yogurt. Next add the mayo, olive oil and lemon juice on top. Mix well to combine.
Spread the dressing over the salad you just prepared. The recipe may yield more than one serving of dressing, so it can be stored for a few days in your fridge.
Serves one.
