Fruity protein bar with sweet potato and oat base. Fruity protein bar with sweet potato and oat base.

    1 sweet potato, baked, skinned
    2 c. dry quick oats
    1/2 c. Bisquick or other baking mix
    3/4 c. light brown sugar
    2 Tbsp. honey
    4 Tbsp. Smuckers strawberry preserves, sugar-free w/Splenda
    1 egg
    2 Tbsp. cinnamon
    1/2 c. pineapple (add juice also)
    6 scoops (33 grams ea. scoop) Super Advanced Body Fortress Whey Protein in Strawberry (or your fav protein powder - a banana flavor would be good, too!)


Preheat oven to 400 degrees. Mix all ingredients together. Line a 8" X 12" pan with tin foil and spray lightly with cooking spray. Spread mixture into pan. Bake 15-18 minutes. After the mixture cools, pick it up out of pan holding the sides of foil. Cut into 16 bars. Freeze remaining bars for quick snack later.
