    Toast Light English Muffin. Tare up, broil longer if needed. Use food processor to finely chop bread crumbs. Add chopped basil, a dash of chili powder & garlic powder. In a seperate bowl pour 1 c. low fat buttermilk. Coat chicken with buttermilk then dip in bread crumb mix. Place on a med-high heat pan coated in a couple tbsp. olive oil.


I used chicken strips. This made enough for my husband & I to each have two & one for each of our two kids = 6 total cooked chicken strips.

**Cubed, this would also be an awesome addition to a salad!
