Introduction

A delicious white wine sauce over rice and potatoes. A delicious white wine sauce over rice and potatoes.
Number of Servings: 6

Ingredients

    200 ml quality white wine
    3 cloves of garlic, chopped
    1 tsp sage (fresh or dried)
    2 tbsp margarine, or butter
    1 tsp ground black pepper
    1/2 cup rice, cooked with 1 c water
    1 large potato

Directions

1. Peel and dice the potato and bring to the boil until tender. Add this to the cooked rice in a large serving bowl, or caserole dish.
2. In a small pot, bring the wine, chopped garlic, and herbs to the boil and simmer for 3-4 minutes, stirring frequently, until the liquid is reduced by about half.
3. Pour this through a sieve into a glass or metal bowl so there are no chunks.
4. Over a pot of hot or boiling water, add the margarine in two goes, stirring constantly until combined.
5. Pour this over the rice and potatoes, and enjoy.
Note: Makes about 4-6 servings, and you can use any combination of veggies you want, but it works best with mild veggies because you can taste the sauce better.
