    1 whole roaster chicken (appx. 3lb) or chicken pieces
    30-40 whole cloves of garlic, peeled (appx. 2 heads)
    1 large yellow onion
    2 tablespoons olive oil
    1 tbsp. Paprika
    1 tsp. thyme , 1 tsp rosemary (I used dried from the garden)


Remove gizzards etc. from chicken. Rinse chicken under cold running water. Pat dry with paper towels.

In a larger crockpot place 1 large onion, sliced to cover bottom. Turn crockpot on high and cover.

Peel 30-40 cloves of garlic but leave whole.

Place olive oil, seasonings and garlic in gallon ziplock. Add chicken. Shake to coat.

Place chicken on top of onions, add contents (garlic, oil, seasonings) of bag.

Cook on high for 4-5 hours, or low 7-8 hours.

Remove chicken and let rest for 15 minutes. Remove skin and remove meat from bones (it should fall right off).

Save the garlic for mashed potatoes or to spread on italian bread. Strain liquid and save for soup stock.
