    1/2 of one roll of pie crust
    2 16 oz bags frozen rhubarb (4.5 cup)
    1 1/2 c sugar
    1T flour
    1T tapioca
    1T corn starch
    1/2t salt
    2 lg eggs
    1t vanilla


Mix dry ingredients together in small bowl.
In large bowl, combine eggs and vanilla.
Add dry ingredients to egg mix. mix well.
Add rhubarb and mix well to coat.
Spray a pie plate or casserole type dish
Pour rhubarb mixture into dish and spread evenly.

Take half of one roll of pie crust and re-roll to fit the dish.
Top the fruit with the crust and cut about 4 slits in the crust

Bake 400 15 minutes, then
bake 350 45 minutes

Serves 8
