I put this recipe together for my vegetarian daughter. It turned out really good. I put this recipe together for my vegetarian daughter. It turned out really good.

    1 cn (150z) fat free refried beans
    1 small can tomato sauce
    1 pkg taco seasoning
    1 (8) ct pkg fat free tortillas (taco size)
    1.25 Cups fat free shredded cheddar
    1 (10)oz can Mild enchilada sauce
    2 cups cooked brown rice


Preheat oven to 350. Spray a 9 X 13 pan with nonstick spray. Mix refried beans, rice, tomato sauce, taco seasoning. Take tortilla and place about 2 - 3 Tbsp of mixture in it and roll. Place fold side down and repeat until all are done. Take remaining mixture and add enchilada sauce (to make it look more appealing) spread over top of the prepared tortillas. Sprinkle with cheese and bake until melted (appx 30 mins)
