Introduction

These low fat muffins are SO good for you. They pack in fiber and protein without much fat or cholesterol.

Number of Servings: 12

Ingredients

    1 cup whole wheat flour
    1/4 flour
    2 cups bran cereal
    1 cup light silk
    1 cup pumpkin
    2 tsp pumpkin pie spice
    1/4 cup egg substitute
    1/2 cup brown sugar
    1 tbs paking powder
    1 tsp salt

Directions

combine cereal and milk in a bowl. let sit for 5 minutes
Add pumpkin, egg, spices and brown sugar to cereal
mix remaining dry ingredients together and add to pumpkin/cereal mixture

Bake at 350 for about 23-25 min
