    1 cup edamame
    1 cup baby peas
    3 cups snap peas (sugar peas)
    1 cup sliced radishes
    8 cups lettuce

    4 tbs reduced fat sour cream or yogurt
    1 tbs honey
    1 tbs olive oil
    2 tbs white vinegar
    2 tbs fresh tarragon, minced

    salt and pepper to taste


Bring pot of water to boil

add frozen peas and edamame to pot and allow to simmer 3 minutes til slightly tender. Add snap peas and simmer 1 minute.

Drain and run under cold water to chill slightly

In a large bowl, add sour cream, vinegar, olive oil, honey, and fresh tarragon... Whisk til blended. add lettuce and toss

Add assorted peas and toss, add radishes as a garnish and toss and serve..

(add some grilled chicken breast or turkey and make it a meal)
