Number of Servings: 8

Ingredients

    1 Tbsp. olive oil
    1 pkg. Italian turkey sausage, sweet or hot, with casings removed (about 6 links)
    2 tsp. fennel seed
    1 onion, chopped
    1/2 head cabbage, shredded
    2 garlic cloves, minced
    1 can white beans, rinsed and drained
    2 cans Swanson 99% Fat-free chicken broth
    28 oz. reduced-sodium Italian-style diced tomatoes
    Black pepper, to taste

Directions

Heat the olive oil in a large saucepan over medium heat. Add the sausage and fennel seeds and cook until no longer pink. Remove from pan, leaving pan juices. Add onion and cook for 2 minutes. Add garlic and cabbage and cook for 2 minutes. Return sausage to pan with beans, chicken broth and tomatoes. Heat to boiling, then lower heat and simmer covered for 20 minutes. Season to taste with black pepper.

    I made this for dinner tonight. It is very similar to a recipe in the Prevention cookbook that I have used for many years. It is a hearty soup that is quick to put together, and my family really enjoys it. - 11/29/09

    Very flavorful and full of vegetables! Use bag of coleslaw mix in place of half head of cabbage. - 2/15/11
