I snuck in some zucchini and no one even knew! I snuck in some zucchini and no one even knew!

    20 oz Foster Farms Ground Turkey (lean)
    10 Hodgson Mill Whole Wheat Lasagna noodles
    1 jar Prego Meat Sauce Italian Sausage & Garlic
    1 cup Water
    1 Baby Zucchini, sliced in long thin strips
    3 cups Shredded Mozzarella Cheese
    2 cups Cottage Cheese, Nonfat
    1/4 cup Parmesan Cheese, grated
    1 large Egg


Boil noodles according to package directions.
Brown ground turkey, add seasonings to taste (I used coriander, fennel, chili flakes, garlic & onion powder, black pepper).
Blend cottage cheese, egg and parmesan cheese in food processor. This will make the texture of the cottage cheese more like Ricotta.
Add Prego sauce and water to cooked turkey and drain the noodles.
Layer 1/2 the sauce/turkey mixture in the bottom of a large baking dish (9x13 or larger).
Cover with 5 of the noodles.
Spoon 1/2 the cottage cheese mixture onto the noodles and sprinkle with 1/2 the mozzarella.
Layer all off the zucchini slices on top of the cheese.
Cover with the rest of the sauce/meat mixture, then the noodles, then the cottage cheese and the mozzarella.
Bake in preheated 400 degree oven for 45 min.
Let cool for 10-15 minutes before serving.

Makes approximately 16 servings.
