This colorful salad is packed with veggies and heart healthy beans. This colorful salad is packed with veggies and heart healthy beans.
Number of Servings: 4

Ingredients

    3 tbsp. balsamic vinegar
    3 tbsp. olive oil
    1 tbsp. honey or agave nectar
    Dijon mustard, 1 tsp.
    1 tsp. Italian herbs
    Dash salt and pepper
    1/2 cup corn kernels
    1/2 cup edamame
    1 cup mixed beans
    3/4 cup cucumber, chopped
    1/2 cup tomato, chopped
    3/4 cup red pepper, chopped

Directions

Pour vinegar into a mixing bowl. Drizzle in oil, whisking constantly. Add honey, mustard, herbs, salt and pepper and mix well. Add the beans and vegetables and mix well. Serve immediately or let sit to up to six hours on the counter to let flavors blend. Makes 4-1 cup servings.
