Introduction

This is a tasty jambalya type meal. It makes an awful lot for my family of 4. I often put some in the freezer for later when I don't feel like cooking. This is a tasty jambalya type meal. Ingredients

    1/2 lb. Italian sausage, sliced
    2 Tbsp. oil
    1 cup each onion and red pepper, chopped
    1 clove garlic, chopped
    1 Tbsp. chili powder
    2 cups brown, long grain rice
    4 1/2 cups chicken broth
    1 cup chopped tomatoes
    1 lb. shrimp in shell (16-20 per pound)
    2 cups frozen peas, uncooked

Directions

In a large deep skillet, brown sausage. Remove and drain on paper towels. Discard fat. Heat oil in the skillet. Add onion, pepper, garlic, and chili powder. Saute for 3 minutes. Add rice and stir until coated. Add sausage and broth; cover pan and simmer slowly for 15 minutes. (This recipe actually calls for white rice; I like to use brown-so it will need to cook longer than 15 minutes) Uncover pan, season with salt and pepper. Add the tomatoes, shrimp and peas. Cover the pan and cook 8-10 minutes until rice and shrimp are cooked.
