    1lb Roma tomatoes
    1 cup chopped onions (Vidalias if possible)
    1 seedless English cucumber, unpeeled , rough chopped
    4 Serrano Peppers, seeds removed, minced (approximately 2 Tbsp.)
    4 Tbsp chopped fresh Cilantro
    1 large clove GArlic
    4 Tbsp Extra virgin olive oil
    2 Tbsp fresh Lime juice
    1 (46oz) bottle Wegmans Spicy Tomato juice


Cut tomatoes in half, then use a spoon to scoop out the seeds and pulp. Then rough chop tomatoes, onions, cucumber, peppers, garlic, and cilantro and combine in a large bowl.
In a food processor, pulse half of the veggie mixture at a time and put into another bowl or container. Do not want tiny little chunks.
Add olive oil, lime juice, Spicy tomato juice and stir to combine.
Chill one hour before serving.

Salt and pepper to taste.
Add your favorite hot sauce and sour cream if desired. (Sour cream is not included in nutritional information.)
This recipe yields about 3 quarts of soup (96 oz)
which equals 12 (1cup) servings.
