Introduction

This is great as a side dish or double up on the servings for a main dish. It used to be the only way my mom could get me to eat vegetables as a kid! Ingredients

    1.5 lbs fresh broccoli, cut up
    1 can cream of celery soup
    1 tablespoon flour
    1/8 teaspoon pepper
    1/2 cup reduced fat sour cream
    2 tablespoons milled flax seed
    1/4 cup chopped onion
    1/4 cup grated carrot

    Topping:
    2 tablespoons melted butter
    1/4 teaspoon poultry seasoning
    1/2 cup crushed cracker crumbs

Directions

makes 6 1-cup servings

1. Cook broccoli; drain
2. Blend soup and flour together in 1.5 qt cassarole dish.
3. Add sour cream, flax seed, carrot, onion and pepper. Stir in broccoli.
4. Combine topping ingredients and sprinkle over cassarole.
5. Bake at 350 degrees for 30 minutes.
