    4 c. cooked barley (cooked in veg broth), cooled
    8 stalks celery chopped
    1 pint grape tomatoes halved
    1/2 c. chopped green olives
    3 oz reduced fat feta
    1 bag (8 c) baby spinach
    s & p

Directions

mix all ingredients in a large bowl, refrigerate and enjoy!
