Introduction

I took the Spark Spring recipe which seemed to have very little vegetables and a crust we could do without; added in 4x the spinach, 8 times the mushrooms, and garlic, plus several cheeses. Ingredients

    eggs,egg whites, egg beaters
    spinach
    mushrooms
    garlic
    green onions (x3)
    flor
    cheddar, asiago and parmesan
    1/3 cu 1% milk

Directions

I did not saute onions and I chose to use green, and put them into the batter.
PREHEAT oven to 350

prep veggies, saute all but green onions
Mix eggs, whites, beaters and add in milk and flour, and green onions,then fold in cheeses
spray an 8x8, and lay in veggies, and cover with egg mixture.
Bake about 25 min til center is firm
