This Recipe is one that my grandmother gave me. It is great in the summer time as it has a nice fresh taste. It goes well with bbq or anything you serve in the summer time. Ingredients

    Two boxes of sugar free lemon geletin
    One 6 oz. fat free cream chesse
    One or two large cucumbers (shredded and peeled)
    One big can of pineapple (crushed)

Directions

Firstly start with the water that is listed on the geletin package for the heating, no need to add cold water to this as the liquid in the pineapple and cucumber will be enough. Mesure it out and boil. Next take your geletin and add to hot water, stiring as you add. Next add your cream chesse cut in to cubes as it melts easer. Take a mixer or a hand whisk and make this mixture lump free. Now let cool and while it cools grate your cucumbers. First peel and then grate using large grater holes. Then add cucumbers. You will need a large jello mold for this. Now just pour into mold and refriderate until firm. Should be done the night before you want it so that is can jell well.
