Introduction

Number of Servings: 7

Ingredients

    1 box of Whole Wheat Couscous (about 11/2 cups) dry
    1 1/2 chopped tomatoes
    1/2 med cucumber chopped
    1/2 cup sliced green salad olives
    3 Tblsps Olive Oil
    3 Tblsps Lemon Juice
    1 tsp Garlic Powder
    1 tsp Oregano
    1 tsp Fines Herbs
    pepper to taste

Directions

Cook Couscous according to directions on box. I use salt substitute because I am watching my sodium. Chop up all vegies. Put in bowl. Add Olive Oil, Lemon Juice & herbs and shake well.
After couscous is cooled, add vegies & mix well. Then toss with dressing.

Serves 6
It's whole grain & contains Omega 3s from Olive oil.

    I add diced grape tomatoes and carrots with chicken or veggie broth instead of oil and water. It's soooo good - 5/31/09
