Ingredients

    1 block tofu -- freeze it then thaw it
    3 russet potatoes, diced
    3 tomatoes, diced
    1/2 or 1 onion, diced

Directions

Saute onion in oil spray. Add potatoes and 1/3 cup water, cover, cook until soft -- this time depends on how big your pieces are. Add tomatoes and tofu, saute for about five minutes. Add oregano and soy sauce and serve with some more soy sauce or tabasco.
