    for rosemary salt
    2 tbs chopped fresh rosemary
    2tbs salt
    1/2 tsp black peppper

    for cauliflower mashed potatoes
    1/2 large head cauliflower, broken into florets
    1/2 cup nonfat buttermilk
    1 pound potatoes peeled and quartedlenthwise and sliced1/2 in thick
    1/2-3/4 cup low fat milk
    1 tbs butter
    2 scallions chopped

    for steak
    1pound steak


for rosemary salt ,combine chopped rosemary and salt on a cutting board and chop together. stir in the pepper, transfer to a small bowl and set aside

for the cauliflower mashed potoes, place the cauliflower in a steamerbasket, set over boiling water, cover and steam 15 min. transfer to a food processor, add buttermilk and 1/4 cup milk, and puree until very smooth, about 2 min meanwhile, place potatoes in a saucepan and add cold salt water to cover by about 2 in; bring to a boil , reduceheat and simmer until tender,about 15 min. drain, return to saucepan and heat over medium heat for 1 to 2 min to dry. mash with potatoe masher.add the cauliflower puree, 1/4 cup milk , 1 tsp salt and 1/4 tsp pepper. stir in the butter and scallions cover and set aside to keep warm

heat a grill or pan sprinle steak on both sides generously with rosemary salt press it into the meat grill the steak 4 min on one side turn and grill to rare, 3 to 4 more min remove to a plate and let stand 5 min thinly slice
