    2 chicken breasts
    2 plantains
    1 sm white onion
    2 tsp garlic
    2 tsp chicken bullion
    1 8oz can of tomato sauce
    1 tsp cumin
    1 16 oz frozen or fresh spinach
    1 8oz can black beans
    2 habaneros


Makes 8-10 servings
boil plantians skin on to soften skin 10 minutes
saute onion and garlic in a pan with EVOO add chicken.
puree habaneros, bullion and 1cup water.
Add to chicken, onion, and garlic. Add plantains, and 3 cups water, bring to a boil over med-high heat. Reduce heat and simmer for 20 minutes, add Spinach, and black beans, and cumin.
Salt and pepper to taste.
