Introduction

My apologies - I don't really know what a compote is! I just like the sound of it. This is sort of a breakfast fruit salad. My apologies - I don't really know what a compote is! I just like the sound of it. This is sort of a breakfast fruit salad.
Number of Servings: 3

Ingredients

    1 medium ripe tomato, chopped (yes, tomato is a fruit! Works very nicely in this!)
    1 medium peach, chopped
    1 medium Granny Smith apple, chopped

    Sauce:

    1 Tbsp mint jelly
    1Tbsp sour cream
    1 oz white wine (I use Chablis. I don't know what you could use if you don't want the wine in it - it's just to thin the sauce some, but water sounds awful)

Directions

Mix chopped fruits in a medium bowl. In a small bowl mix mint jelly, sour cream and white wine, whipping to combine as thoroughly as possible, although some tiny chunks of jelly are good in it). Pour sauce over fruit, stir to coat and serve.

Makes three approximately 1-cup servings.
