    2 tsp olive oil
    1 red bell pepper, thinly sliced
    1 red onion, halved and thinly sliced
    1/4 cup coarsely chopped cilantro (I prefer to use a half packet of Goya Sazon con Culantro y Achiote)
    4 whole wheat tortillas (10" diameter)
    3 cups chicken breasts, cut into strips

    1/2 cup mango salsa (see my recipe list)


1. Cook chicken breasts and cut into strips (I usually put them on the George Foreman).

2. Heat oil in large nonstick skillet over medium heat. Add bell pepper and onion and cook until soft, about 10 minutes. Stir in cilantro (or Sazon). Cover skillet to keep warm.

3. Place each tortilla in large, dry skillet over medium heat. Warm 30 seconds per side.

4. Divide vegetables evenly among centers of each tortilla. Arrange chicken over vegetables and top with 2 tablespoons salsa. Garnish with cilantro, if desired. Fold in sides, then roll tortillas into tight cylinders.
