Introduction

I sometimes make these with oats, or any dried fruit--cranberries are really good. I of course cut the sugar and use turbinado instead of white sugar. Ingredients

    3 ripe bananas
    1/4 cup oil
    1 cup sugar
    2 cups wheat flour
    1 tsp salt
    1 tsp baking soda
    1 cup walnuts/oats/raisins/chocolate chips

Directions

Mash bananas, add oil and sugar, mix well. Sift flour, salt, baking soda together and add it to the banana mixture. Mix well until blended, (do not beat). Pour into muffin tins and bake at 350 for 10-15 minutes, or until toothpick comes out clean.
