Veggie Tacos Veggie Tacos

    1 cup chopped Mixed Peppers (Red sweet, yellow sweet, orange sweet)
    1/4 cup celery, chopped
    1/4 cup mushrooms chopped
    1/5 cup Black Beans, cooked
    1 oz Low fat cheddar cheese, shredded
    2 prepared corn tortillas
    Tomatoes, chopped
    Jalapeno peppers (optional)


Saute peppers, celery and mushrooms until just softned. Add a dash of tabasco sauce while sauteeing.

Add pepper mix, black beans, cheese, tomatoes, lettuce and Jalapenos to prepared taco shells!
