    Yellow Cornmeal, 1 cup
    Baking Powder, 1/4 tsp
    Baking Soda, 1/4 tsp
    Granulated Sugar, 2 tbsp
    Buttermilk, 1 cup
    Water, tap, 1 cup
    Egg, fresh, 1 large
    Egg white, 1
    Vegetable Oil, 2 tbsp


Pre-heat oven to 375 degrees F.

In a large bowl, combine cornmeal, baking powder, baking soda, salt, sugar, buttermilk, water, whole egg and egg white: mex well

Using a paper towel, coat the entire inside surface of a 9" cast iron skillet with oil. Place skillet in the oven for 5 minutes, remove skillet from oven and pour heated oil into batter, mixing well.

Pour batter into skillet and bake for 35 minutes or until nice golden brown.

  • I made a double batch in a 12" cast iron skillet. The top never cooked. It was as if the milk settled on top while everything else cooked. The flavor was horrible! Everyone said it reminded them of corn-flavored cream of wheat. - 2/9/11
